Ingredients
  

For the Beef Heart

  • 1 beef heart about 2-3 lbs, trimmed and cleaned
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon dried oregano

For the Garlic Butter Sauce

  • 2 tablespoons unsalted butter
  • 3 cloves garlic minced
  • 1 teaspoon fresh rosemary or thyme chopped
  • 1 tablespoon lemon juice

For Serving (Optional)

  • roasted vegetables
  • mashed potatoes
  • fresh parsley for garnish

Instructions
 

  • Rinse the beef heart and trim any excess fat or tough connective tissue.
  • Slice into ½-inch thick strips for quicker cooking.
  • In a bowl, coat the beef heart strips with olive oil, salt, black pepper, smoked paprika, garlic powder, and oregano. Let marinate for 15 minutes.
  • Set a cast iron skillet over medium-high heat and add a little oil to coat the pan.
  • Add the beef heart slices and cook for 3-4 minutes per side, until browned and cooked through but still tender. Remove from the pan and set aside.
  • In the same pan, melt butter and add garlic. Sauté for 1 minute until fragrant.
  • Stir in rosemary and lemon juice, then return the beef heart to the pan, tossing to coat in the sauce.
  • Serve hot with roasted vegetables or mashed potatoes, and garnish with fresh parsley.

Notes

For a deeper flavor, marinate the beef heart overnight in a mixture of soy sauce, vinegar, and garlic before cooking.
