Ingredients
  

For the Beef

  • 2 lbs beef brisket or shank cut into cubes
  • 4 cups water for boiling
  • 2 tbsp oil
  • 1 onion chopped
  • 4 cloves garlic minced
  • 1 thumb-sized ginger sliced
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tbsp oyster sauce
  • 1 tsp five-spice powder
  • 2 star anise
  • 1/2 tsp black pepper
  • 2 cups beef broth
  • 1 tbsp cornstarch mixed with 2 tbsp water for thickening
  • 2 tbsp green onions chopped, for garnish

For the Garlic Fried Rice

  • 3 cups cooked rice
  • 2 tbsp oil
  • 4 cloves garlic minced
  • 1/2 tsp salt

For the Clear Soup

  • 4 cups beef broth reserved from braising
  • 1 tsp fish sauce
  • 1 stalk green onions chopped
  • 1/2 tsp black pepper

Instructions
 

  • In a pot, bring 4 cups of water to a boil. Add beef cubes and boil for 10 minutes to remove impurities. Drain and rinse the beef.
  • Heat oil in a pot over medium heat. Sauté onion, garlic, and ginger until fragrant.
  • Add the beef, soy sauce, brown sugar, oyster sauce, five-spice powder, star anise, and black pepper. Stir well.
  • Pour in beef broth, cover, and simmer for 1.5 to 2 hours until tender.
  • Once beef is tender, mix in the cornstarch slurry and simmer for 5 minutes until the sauce thickens. Set aside.
  • Heat oil in a pan, sauté minced garlic until golden brown. Add cooked rice and salt, stir-frying until well combined. Set aside.
  • In a small pot, heat the reserved beef broth. Season with fish sauce, black pepper, and green onions.
  • Plate the beef pares with garlic fried rice and a side of soup. Garnish with chopped green onions and enjoy!

Notes

This Filipino classic is best enjoyed with a side of garlic fried rice and clear soup. The braised beef is rich, tender, and full of flavor.
