Ingredients
  

For the Cake

  • 1 box yellow or vanilla cake mix
  • 3 large eggs
  • 1/2 cup vegetable oil or melted butter
  • 1 cup water or milk
  • 1 tsp vanilla extract optional
  • 1 1/2 cups mixed fruit fresh, canned, or dried
  • 1/2 tsp cinnamon optional, for extra flavor
  • 1/4 cup chopped nuts optional

Instructions
 

  • Preheat oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan or bundt pan.
  • In a large bowl, combine the cake mix, eggs, oil, water (or milk), and vanilla extract. Beat for 2 minutes until smooth.
  • Gently fold in the mixed fruit and cinnamon (if using). If using dried fruit, soak in warm water for 10 minutes, then drain before adding.
  • Pour the batter into the prepared pan and spread evenly. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  • Let cool for 10 minutes before slicing. Serve warm or at room temperature with whipped cream or a dusting of powdered sugar.
