Ingredients
  

For the Salad

  • 4 cups chopped curly kale
  • 2 cups shredded green cabbage
  • ¼ cup sliced almonds
  • ¼ cup roasted sunflower seeds optional for extra crunch

For the Maple Dijon Dressing

  • ¼ cup olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp maple syrup or honey
  • 1 tbsp Dijon mustard
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp lemon juice for brightness

Instructions
 

  • In a small bowl, whisk together olive oil, apple cider vinegar, maple syrup, Dijon mustard, salt, black pepper, and lemon juice. Set aside.
  • In a large bowl, massage the chopped kale with half of the dressing for about 1-2 minutes until it softens.
  • Add shredded cabbage and toss to combine.
  • Sprinkle sliced almonds and sunflower seeds over the salad.
  • Drizzle with the remaining dressing and toss well.
  • Serve immediately or let it sit for 15-20 minutes for the flavors to blend.

Notes

For extra crunch, add more almonds or sunflower seeds. You can also add dried cranberries for a touch of sweetness.
