For the Salad

chopped curly kale

shredded green cabbage

sliced almonds

roasted sunflower seeds

For the Maple Dijon Dressing

olive oil

apple cider vinegar

maple syrup

Instructions
In a small bowl, whisk together olive oil, apple cider vinegar, maple syrup, Dijon mustard, salt, black pepper, and lemon juice. Set aside.
In a large bowl, massage the chopped kale with half of the dressing for about 1-2 minutes until it softens.
Add shredded cabbage and toss to combine.
Sprinkle sliced almonds and sunflower seeds over the salad.
Drizzle with the remaining dressing and toss well.
Serve immediately or let it sit for 15-20 minutes for the flavors to blend.
Notes
For extra crunch, add more almonds or sunflower seeds. You can also add dried cranberries for a touch of sweetness.
