Ingredients
  

For the Chicken:

  • 1 lb boneless skinless chicken breasts, thinly sliced
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp Italian seasoning

For the Vegetables:

  • 1 green bell pepper thinly sliced
  • 1 red bell pepper thinly sliced
  • 1 small onion thinly sliced
  • 1 tbsp butter

  • 4 hoagie rolls or sub rolls
  • 4 slices provolone cheese or white American cheese
  • 1 tbsp mayonnaise optional

Instructions
 

Step 1: Cook the Chicken

  • Heat olive oil in a large skillet over medium-high heat.
  • Add thinly sliced chicken and season with salt, black pepper, paprika, garlic powder, onion powder, and Italian seasoning.
  • Cook for 5-7 minutes, stirring occasionally, until fully cooked. Remove from the skillet and set aside.

Step 2: Sauté the Vegetables

  • In the same skillet, melt butter and add sliced bell peppers and onions.
  • Cook for 5-6 minutes, stirring occasionally, until softened.

Step 3: Combine & Melt the Cheese

  • Return the cooked chicken to the skillet and mix with the vegetables.
  • Place cheese slices on top and let melt for 1-2 minutes.

Step 4: Toast the Hoagie Rolls

  • Preheat oven to 375°F (190°C).
  • Spread mayonnaise (optional) inside each hoagie roll and lightly toast for 3-5 minutes.

Step 5: Assemble & Serve

  • Fill each roll with the cheesy chicken and vegetable mixture.
  • Serve warm with fries, chips, or a side salad.

Notes

Want it spicy? Add red pepper flakes or sliced jalapeños.
No hoagie rolls? Use French bread or sandwich buns.
Store leftovers in an airtight container for up to 3 days.
