Chipotle Ranch Grilled Chicken Burrito

Ingredients
  

Grilled Chicken

  • 2 pieces chicken breasts boneless, skinless
  • 2 tbsp olive oil
  • 1 tbsp lime juice freshly squeezed
  • 1 tsp chipotle powder
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp salt
  • 1/2 tsp black pepper

Chipotle Ranch Sauce

  • 1/2 cup ranch dressing
  • 1 tbsp chipotle peppers in adobo sauce finely chopped
  • 1 tsp lime juice
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder

Burrito Assembly

  • 4 flour tortillas large
  • 1 cup shredded cheese cheddar or Monterey Jack
  • 1 cup lettuce shredded
  • 1 cup tomatoes diced
  • 1 cup crispy tortilla strips

Instructions
 

  • In a bowl, mix olive oil, lime juice, chipotle powder, garlic powder, cumin, salt, and black pepper to create a marinade.
  • Coat the chicken breasts in the marinade and let them sit for at least 30 minutes.
  • Heat a grill pan over medium-high heat and cook the chicken for 5-7 minutes per side until fully cooked (internal temperature of 165°F).
  • Remove the chicken from the grill, let it rest for a few minutes, then slice into thin strips.
  • In a small bowl, mix ranch dressing, chipotle peppers in adobo, lime juice, garlic powder, and onion powder to make the chipotle ranch sauce.
  • Warm the flour tortillas on a skillet for about 20 seconds per side.
  • Assemble the burrito by layering grilled chicken, shredded cheese, lettuce, tomatoes, crispy tortilla strips, and a drizzle of chipotle ranch sauce onto each tortilla.
  • Fold in the sides, roll tightly from the bottom, and tuck everything in to secure the burrito.
  • Lightly grease a skillet and grill the burrito seam-side down for 1-2 minutes per side until crispy and golden brown.

Notes

Customize your burrito by adding avocado, black beans, or spicy jalapeños. For a healthier version, use whole wheat tortillas or Greek yogurt instead of ranch dressing.
