Ingredients
  

Cake

  • 1 ¾ cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1 ½ tsp baking powder
  • 1 ½ tsp baking soda
  • ½ tsp salt
  • 2 large eggs
  • 1 cup whole milk or buttermilk for extra moisture
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup hot water or hot coffee enhances chocolate flavor

Chocolate Frosting

  • 1 cup unsalted butter softened
  • 3 ½ cups powdered sugar
  • ½ cup unsweetened cocoa powder
  • ½ tsp salt
  • 2 tsp vanilla extract
  • ¼ cup heavy cream adjust for consistency

Instructions
 

  • Preheat oven to 350°F (175°C). Grease and flour two 9-inch cake pans.
  • In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  • Add eggs, milk, oil, and vanilla to the dry ingredients. Mix until smooth.
  • Slowly stir in hot water or coffee. Batter will be thin but smooth.
  • Divide the batter evenly into the cake pans and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  • Let cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  • In a mixing bowl, beat butter until creamy. Add powdered sugar, cocoa powder, and salt, mixing until combined.
  • Stir in vanilla extract and heavy cream, then beat until light and fluffy.
  • Place one cake layer on a serving plate. Spread ½ of the frosting evenly on top.
  • Add the second cake layer and spread the remaining frosting over the top and sides.
  • Let set for 10 minutes, then slice and serve!

Notes

For an even richer chocolate flavor, use coffee instead of water in the batter.
