1/4cupcrushed cookiesOreos, chocolate chip cookies, or your favorite
For the Topping
1/4cupheavy cream
1/4cuppowdered sugarfor dusting
Instructions
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
Mix in vanilla extract and egg yolk until combined.
In another bowl, whisk together flour, baking soda, and salt. Gradually mix this into the butter mixture.
Fold in mini chocolate chips and crushed cookies, then set the cookie dough aside.
Slice croissants in half lengthwise without cutting all the way through, creating a pocket.
Spoon a generous amount of cookie dough inside each croissant and gently press to close.
Arrange stuffed croissants on the baking sheet and bake for 10-12 minutes, just until the croissants are golden and the cookie dough is slightly gooey.
Warm heavy cream and drizzle over the croissants before serving.
Dust with powdered sugar and enjoy warm!
