Ingredients
  

  • 2 cups old-fashioned oats
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 1 cup unsalted butter softened
  • 1 cup brown sugar packed
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups semi-sweet chocolate chips
  • 1 cup chopped walnuts optional

Instructions
 

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together oats, flour, baking soda, cinnamon, and salt. Set aside.
  • In a large bowl, beat softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Fold in chocolate chips (and walnuts if using).
  • Scoop dough onto the prepared baking sheet using a cookie scoop or spoon, spacing them about 2 inches apart.
  • Bake for 10-12 minutes or until edges are golden brown and centers look slightly soft.
  • Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For extra chewy cookies, slightly underbake and let them finish cooking on the baking sheet. You can also substitute walnuts with pecans or leave them out for a nut-free version.
