Ingredients
  

For the Meatloaf

  • 1 1/2 lbs ground beef 80/20 for best flavor
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 egg
  • 1 cup breadcrumbs
  • 1/4 cup milk
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 1/2 tsp smoked paprika
  • 1 tbsp olive oil for sautéing onion

For the Glaze

  • 1/2 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp apple cider vinegar

Instructions
 

  • Preheat oven to 350°F (175°C) and lightly grease a loaf pan or line with parchment paper.
  • In a small pan, heat olive oil over medium heat. Add chopped onions and cook for 5-7 minutes until softened and slightly caramelized. Let cool slightly.
  • In a large bowl, combine ground beef, sautéed onions, garlic, egg, breadcrumbs, milk, Worcestershire sauce, salt, pepper, thyme, and smoked paprika. Mix until just combined (don’t overwork the meat).
  • Shape the meat mixture into a loaf and place it into the prepared loaf pan.
  • In a small bowl, combine ketchup, brown sugar, and apple cider vinegar. Stir until smooth.
  • Brush the glaze generously over the top of the meatloaf. Bake for 45-55 minutes, or until the internal temperature reaches 160°F (71°C).
  • Let the meatloaf rest for 5-10 minutes before slicing. Serve with mashed potatoes or roasted vegetables.

Notes

For a juicier meatloaf, use a mix of ground beef and ground pork. Leftovers make great sandwiches!
