Ingredients
  

Base Ingredients

  • 1 tsp coconut oil or avocado oil
  • 1 small onion diced
  • 3 cloves garlic minced
  • 2 carrots sliced
  • 2 stalks celery chopped
  • 1 medium zucchini diced
  • 1 medium sweet potato peeled and cubed
  • 6 cups vegetable broth or water

Seasonings

  • 1 tsp turmeric powder
  • 1/2 tsp ground ginger or 1 tsp fresh grated ginger
  • 1/2 tsp cumin optional for deeper flavor
  • 1/2 tsp Himalayan pink salt optional
  • 1/2 tsp black pepper

Final Additions

  • 4 cups kale de-stemmed and chopped
  • 1/2 cup fresh parsley chopped
  • 1/2 lemon juiced

Instructions
 

  • In a large pot, heat coconut or avocado oil over medium heat. Add diced onion and garlic, sautéing for 2-3 minutes until fragrant.
  • Stir in carrots, celery, zucchini, and sweet potato. Cook for another 3 minutes.
  • Pour in vegetable broth or water. Add turmeric, ginger, cumin, salt (if using), and black pepper. Stir well and bring to a boil. Reduce heat and let simmer for 20-25 minutes until the vegetables are tender.
  • Stir in kale and parsley, simmering for 5 more minutes until kale is soft and vibrant.
  • Turn off the heat and stir in fresh lemon juice for brightness and added cleansing benefits.
  • Ladle into bowls and enjoy warm as a healing, nutrient-dense meal.
