Preheat oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.
In a large mixing bowl, combine cream cheese, sour cream, cream of chicken soup, shredded cheddar cheese, garlic powder, onion powder, black pepper, salt, and Italian seasoning. Mix until smooth.
Fold in the shredded chicken until evenly coated with the creamy mixture.
Transfer the mixture to the prepared baking dish and spread evenly.
In a separate bowl, mix crushed Ritz crackers with melted butter. Sprinkle over the casserole.
Bake uncovered for 30-35 minutes, or until bubbly and golden brown on top.
Remove from oven and garnish with chopped parsley. Let cool slightly before serving.
Notes
For extra flavor, add a sprinkle of parmesan cheese to the topping before baking. Serve with a side salad or steamed vegetables!
