Panera Bread Tomato Soup Copycat Recipe

This creamy and flavorful tomato soup, inspired by Panera Bread, is rich, smooth, and slightly sweet. Made with San Marzano tomatoes, heavy cream, and basil, this easy one-pot soup is perfect for cozy lunches, dinners, or dipping grilled cheese!

Ingredients
  

  • 2 tbsp butter or olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 2 tbsp tomato paste
  • 1 28 oz can San Marzano tomatoes (or fire-roasted tomatoes)
  • 2 cups vegetable broth or chicken broth
  • 1 tsp sugar balances acidity
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried basil or 2 tbsp fresh basil
  • 1/2 cup heavy cream or half-and-half for a lighter version

Instructions
 

Step 1: Sauté the Aromatics

  • Melt butter in a pot over medium heat.
  • Add onion and garlic, and sauté for 3-4 minutes until soft.

Step 2: Cook the Tomatoes

  • Stir in tomato paste, cooking for 1 minute.
  • Add canned tomatoes, broth, sugar, salt, pepper, and basil.
  • Bring to a simmer and cook for 20 minutes, stirring occasionally.

Step 3: Blend Until Smooth

  • Use an immersion blender (or transfer to a regular blender) and blend until creamy and smooth.

Step 4: Add the Cream & Serve

  • Stir in heavy cream and simmer for 2 minutes.
  • Taste and adjust seasoning if needed.

Step 5: Serve & Enjoy!

  • Serve hot with grilled cheese, croutons, or fresh basil garnish.

Notes

Want a dairy-free version? Use coconut milk instead of heavy cream.
For extra richness, add Parmesan cheese before serving.
Store leftovers in an airtight container for up to 4 days.
