  • 2 cups shelled, unsalted pistachios
  • 2 tbsp honey or maple syrup optional, for sweetness
  • 1 tbsp coconut oil or olive oil for extra creaminess
  • 1/2 tsp sea salt
  • 1/2 tsp vanilla extract optional, for flavor boost

Instructions
 

  • Toast the Pistachios (Optional): Preheat oven to 350°F (175°C). Spread pistachios on a baking sheet and toast for 5-7 minutes until fragrant. Let cool slightly.
  • Blend the Nuts: Add the pistachios to a high-speed blender or food processor and blend on high for 2-3 minutes. Scrape down the sides as needed.
  • Add Oil & Sweetener (If Using): Once the mixture starts to turn into a paste, add coconut oil, honey (or maple syrup), sea salt, and vanilla extract. Continue blending until smooth and creamy.
  • Adjust Texture: If the butter is too thick, add a little more oil to reach your desired consistency.
  • Store & Enjoy: Transfer the pistachio butter to an airtight jar and store in the fridge for up to 2 weeks. Use it as a spread, drizzle, or baking ingredient!

Notes

For a deeper flavor, try using roasted pistachios. You can also add a dash of cinnamon or cocoa powder for a unique twist.
